Hōtō is a well-known dish from Yamanashi prefecture. You’ll find many variations of this local specialty – most importantly a variant without animal products if you ask for it. Though simple in its ingredients, the dish has a very rich taste made even better by the additions of regional mountain vegetables.
This thick noodle delicacy is even said to have been the favorite of famed Samurai Takeda Shingen. Well, if it’s good enough for him, it’s certainly good enough for me!
